This lot is one of CafExporto’s special releases, a project of extraordinary experimental processing under the craftsmanship of Juan Andrés Tapia. This very limited release is underpinned by an approach of meticulous attention to detail and rigorous methodology. 

Only the most pristine cherries are picked by a dedicated team expertly trained in precision harvesting. From there they are de-pulped and the seeds placed in an anaerobic environment to ferment for 120hrs before being washed thoroughly. The seeds are dried in an exclusive drying chamber for closer monitoring.

We taste an undeniable flavor of pinotage, a red wine from South Africa. While it bears the rich qualities of red wine, it’s cut through with a berry compote sweetness and acidity, and elevated by notes of ripe strawberry.
